Easy Potato Soup

I created this the other day while I was feeling under the weather.  Wow.  Who would’ve thought I’d come up with something so tasty while feeling yukky!

  • 3 Tbps. butter
  • 1 small onion, minced
  • 1-2 Tbsp. garlic
  • 4-5 small potatoes, sliced thinly
  • 3 cups chicken stock
  • 1 can cream of celery, cream of chicken, or cream of mushroom soup
  • salt and pepper to taste
  • parsley, chopped (optional)
  • sour cream (optional)
  1. In a mediums-sized stock pot, melt butter. Add onion and garlic; saute for about 5 minutes.  (I really like garlic, so sometimes I add more than 2 Tbsp.)
  2. Add the potatoes and stir until they are coated in butter.
  3. Add chicken stock and stir.
  4. Cover and bring to a boil.  Keep at a steady boil for about 10 minutes, stirring occasionally.
  5. Reduce heat and simmer for about 30 minutes to an hour, stirring occasionally and breaking up the potatoes with the back of the spoon.  The soup is done when most of the potatoes have broken down and only tiny chunks are left.
  6. Add the can of soup and mix well.  Cook for another 10-15 minutes or until soup has reached desired temperature.  Taste and add any seasonings if necessary.
  7. Top with parsley and/or sour cream, if desired.

Serves 2-3 people, depending on how much you ladle into each bowl.  :)

Baked Sweet Potato Fries

I made these the other day and had to muster up all the control I could not to eat them in one sitting.  They’re gluten-free and awesome dipped in ranch dressing!

  • Olive Oil, for tossing
  • 5 sweet potatoes, peeled and sliced into 1/4-inch long slices, then 1/4-wide inch strips, using a crinkle cut knife
  • 1 Tablespoon seasoned salt
  • 1/2 teaspoon paprika
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  1. Preheat oven to 450 degrees F.
  2. Line a sheet tray with parchment.  (or you can do what I did, which was skip the parchment and spray the tray with olive oil)
  3. In a large bowl toss sweet potatoes with just enough oil to coat.  Sprinkle with seasoned salt and paprika.
  4. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd.  If they touch, they’ll turn out soggy or take forever before they turn slightly crispy, which is the way I like them.
  5. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes.  Keep an eye on them so they don’t burn.  Burnt sugar smells and tastes horrible!
  6. Let cool 5 to 10 minutes before serving.
